Pistachio Brookie/Whirlybird Coffee Co.

Those tree whirlybirds can show up in unexpected locations. They start falling in the spring, and next thing you know, they’re several rooms into your house, having transported on your shoes. They’re still pretty cool, being whirlybirds and all. Unexpected location, pretty cool: that also describes Whirlybird Coffee Co. It’s a place where I found *this* brownie:

It looks big…it was big.

It’s called the pistachio brookie, a massive gooey brownie with pistachio cookie dough on top of a brownie layer. This was a “wow.” A good baked crust on the outside, soft chocolate chip mixture inside, and those elements of green pistachio providing a nice nutty contrast.

Here’s the thing, though: I got to enjoy this because my wife and I went there on St. Patrick’s Day. Whirlybird went all-out with St. Patty’s specials, and this was one of them. The fact that you’re reading this at least a few days after the holiday means, well, those specials are in the past like that holiday, but no worries. There is a lot of great baked goods there no matter the season.

Whirlybird Coffee Co. is in the same location as the previously-reviewed Little Wissota Bakehouse, at Dove Healthcare South on the east side of Chippewa Falls. As they note on their website, they continued the recipes from Little Wissota; considering how much I liked their oatmeal cream pie, I know that Whirlybird’s selection will be similarly scrumptious.
